“Progressive” is an apt description of the menu in Azure Restaurant & Bar, a warm, contemporary space encircled by floor-to-ceiling windows. Chef de Cuisine Jonaton Lome uses local produce and fine Canadian beef, poultry, fish and seafood to create seasonal menus and daily soup, salad and entrée specials; an herb-crusted halibut served with an olive tepanade is a particular favourite. In the bar, signature martinis are served under the stunning “Liquid Veil”, a work of glass art by Stuart Reid.
