China Shadow puts a slight spin on tradition to create its version of “contemporary Cantonese” cuisine. With a nod to ancient Chinese cooking techniques and flavours handed down for 4,000 years, the chefs gently season their dishes with essences of Szechwan, Shanghai and Beijing to enhance the natural flavours, textures and fragrances. Four private dining rooms, each accommodating up to 10 guests, are ideal for family gatherings or entertaining clients.

The chefs in THE DINING knew it would take a special touch to improve on French cuisine. They started with a traditional French base and introduced the flavours of Italy and Asia for original, fusion-style fare like no other. The creativity begins with a lavish buffet for breakfast and shifts into menu mode for lunch, dinner and afternoon tea. Water surrounds the dining environment, which is bathed in sunlight by day and aglow with candles by night.
