Your choice of chilled fruit juices; Pineapple, Orange or Apple. Freshly sliced Tropical Fruit in season. Assorted breakfast cereals; Cornflakes, All Bran, Sultana Bran, Coco Pops and Rice Bubbles served with dried fruits. Natural Yoghurt and fruit coulis. Bakers selection of home-baked croissants, Danish pastries and Muffins Breakfast rolls and toast, butter, jams, fruit preserves and honey. Freshly brewed Coffee and a fine selection of Teas.

Entrée: Smoked Salmon Millefeuilles; on savory Blinis with vanilla sour cream and kitaro caviar Main: Pork Loin Cutlet; served with baked apple, cranberry, pesto mash, asparagus and balsamic glaze. Macadamia Crusted Lamb Rack; served with ratatouille vegetables, herbs couscous and Moroccan demi glaze. Dessert Individual Tiramisu; with chocolate sauce and strawberries. Chocolate Mud Cake; with cream anglaise and berries.

Entrée: Twice cooked Pork Belly; green apple, pawpaw, roasted macadamia nuts and Quandong jam reduction. Grilled Scallops; kipfler potatoes, crisp asparagus and sauce vierge. Main: Crispy Skin Red Snapper Fillet; lemon aspen risotto, broccolini lime Hollandaise sauce. Duck Breast; with mashed potatoes caramelized roasted vegetable, Shiraz sauce and Truffle oil. Dessert Pear and Walnut Tart; with strawberry coulis and fresh cream. Cheese cake; Raspberry passion fruit coulis and cream anglaise.
